Cumin — known as jeera in Hindi — is one of India's highest-volume spice exports and a staple ingredient across Middle Eastern, South Asian, Mexican, and European cuisines. Yet many international buyers are unaware of the significant quality variation between cumin grades — and the financial and regulatory consequences of sourcing the wrong one.
India's Dominance in Global Cumin Supply
India accounts for approximately 70% of global cumin production, with the districts of Unjha in Gujarat and Jodhpur in Rajasthan forming the two primary production hubs. Unjha alone is the world's single largest cumin trading market, handling over 60% of India's total output. This geographic concentration gives Indian suppliers — particularly those based in Gujarat — a significant sourcing and pricing advantage over brokers operating from other regions.
Understanding Cumin Quality Parameters
Volatile Oil Content is the primary quality indicator for cumin. It determines aroma intensity and flavour potency. Premium grade cumin should show minimum 2.5% v/w volatile oil. Lower-grade or old-stock cumin often falls below 2.0%, resulting in a flat, muted flavour profile.
Moisture Content must be max. 10%. Above this level, cumin is susceptible to mould growth and volatile oil degradation during shipping.
Extraneous Matter — dirt, stones, stems, and foreign seeds — must not exceed 0.5% in export grade. Machine-cleaned, double-sorted cumin will consistently meet this threshold.
Damaged and Discoloured Seeds must be below 2%. Dark, shrivelled, or insect-damaged seeds indicate poor harvest conditions or improper storage.
Cumin Grades Explained
Singapore Grade / Eagle Grade (Premium): Machine-cleaned, double-sorted, volatile oil min. 2.5%, moisture max. 10%, extraneous matter max. 0.3%. This is the standard demanded by GCC, EU, and North American premium buyers.
FAQ Grade (Fair Average Quality): Standard commercial grade, moisture max. 12%, extraneous matter max. 1%. Suitable for industrial grinding applications.
Bold / Hybrid Variety: Larger seed size, higher oil content — preferred by Middle Eastern buyers for whole-seed applications in bread and rice dishes.
